There’s something magical about dining in Sedona. The red rocks glow under the setting sun and the air carries a sense of calm that perfectly complements an evening of fine dining. I was honored to be invited to an intimate hosted media dinner at Costa by Roberto Madrid, where the natural beauty of Sedona met the vibrant energy of modern Latin cuisine. From the first sip to the final bite, it was a night that celebrated flavor, artistry, and connection.
About Costa by Roberto Madrid

Costa is an adorable, intimate restaurant featuring about seven inside tables, five outside tables, and six barstool seats at the bar. With Sedona’s beautiful fall weather, an outdoor table offers the perfect view of the iconic red rocks while you dine. Parking is convenient right in front and it’s easy to find using any online map. Costa is welcoming, cozy, and effortlessly blends upscale dining with a relaxed Sedona charm.
Cocktail Hour

As the sun dipped below the horizon, Costa’s warm glow invited guests inside. The restaurant filled with soft light and the flicker of table candles. As we mingled and introduced ourselves, Chef Roberto Madrid stepped forward to personally welcome everyone. His enthusiasm matched ours. You could feel his excitement to share his creations.

Each course that followed was truly a work of art, both visually and in flavor. Every dish arrived beautifully plated, showcasing Chef Roberto’s eye for detail and creativity.

Chef Roberto Madrid blends the vibrant flavors of Latin America with a contemporary flair that feels both refined and approachable. Speaking with him throughout the evening was a joy. His laughter was infectious and his passion for food was unmistakable. Watching him plate dishes with precision and genuine enjoyment was inspiring. He’s a natural in front of the camera, handling the evening’s filming with charm and ease. His commitment to using fresh, locally sourced ingredients shines through in every dish that looks as beautiful as it tastes.
Signature Drinks
Costa’s bar program is exceptional, featuring tequila and mezcal forward cocktails that pair beautifully with the menu. Each drink is carefully crafted, visually stunning, and full of flavor. For those unfamiliar, mezcal is a smoky cousin of tequila, made from various agave plants and roasted to create its distinctive bold taste.

Mojito de Coco Rumhaven Coconut Rum, cucumber infused demerara syrup, fresh lime juice, club soda.

Pisco Sour Viñas de Oro Pisco, fresh lemon juice, mint infused demerara syrup, egg white, Bogart Bitters float and lemon zest.

Chicha Morada Dehydrated purple corn, cardamom, cinnamon, brown sugar, pineapple, green apple, with Sol Tarasco mushroom-infused rum and Viñas de Oro Pisco.

Ponche Sueño Rumhaven Coconut Rum, fresh grapefruit juice, Alchermes liqueur, Guanábana liqueur, Kilani Coconut liqueur, fresh lemon juice; infused with rosemary and clarified.
I had the Ponche Sueño, and it tasted like Christmas. Festive, bright, and comforting all at once. It’s a must-try.
Culinary Highlight: My Must Try Dish

As a raw fish fan, the Totopo de Atún Sabroso. Tuna sashimi over crispy wonton with sweet soy sauce immediately caught my attention. The combination of crisp texture, delicate tuna, and layered flavors was perfection. It was one of those dishes that makes you pause and appreciate every bite.

Finding Costa by Roberto Madrid

Costa by Roberto Madrid is conveniently located at 150 AZ-179, Ste 9, Sedona, AZ 86336, with easy access and parking right in front. Reservations can be made directly through Costa’s website. While there’s no formal dress code, I chose to wear a nice dress and would recommend business casual to slightly dressy attire because it’s always enjoyable to feel a bit fancy while dining out in Sedona. Costa is open daily from 4:00 PM to 9:00 PM.

This evening perfectly reflected what Forever Sabbatical is all about, discovering new experiences, connecting with others, and finding joy in every moment. Dining at Costa reminded me how food can bring people together and turn a meal into a memorable journey.
